Description
Juniper is a popular spice in Central European cuisine. Juniper is a good contrast when it comes to fatty meat, especially venison. In Germany, Austria and France, sauerkraut is seasoned using juniper. The dark purple berries can be recognized by its uniquely sweet flavour and a hint of pine needles.
Tips & Preparation:
Juniper is popular in pickled blends and red wine marinades, but can also be used in desserts and jams.
Tip: For an intense aroma, crush the berries before use. Note: white dots may form on the surface due to the natural fruit sugar that is expelled.
